YEAST POLYGALACTURONASE: A PRODUCT LARGE POTENTIAL BIOTECH

Abstract
Microbial pectinases are of commercial interest and they are used in many industrial food applications, particularly in fruit and vegetable processing. Until now the main source of pecticenzymes for industrial use is the mold Aspergillus níger. These commercial preparations of fungal origin contain a complex mixture of differents enzymes with pectinolytic activity and other nonpectic enzymes with no suitable effect. In this sense, yeast polygalaturonases could offer a good alternative to fungal enzymic preparations. This work is about some more important questions
related with pectic enzymes, particularly polygalacturonases. Microbial production, potentialities and principal applications are deatt.
