Abstract

This work begins due to de need of increasing the durability of Tínima export beer so that it does not change its organoleptic characteristics such as odor, flavor and aspect. The objective of this work is to evaluate the technology of separation with membranes to increase the durability of Tínima export beer.
An experimental module of separation with membranes was created and different cott-off were proved at various preasures to determine the best one. The runs were made with membranes of oxide of zirconium supported on graphite of the CARBOSEP firm of 300 kDa, M-14 y M-45 cott-off with preasures of 5 and 7,5 atmospheres. Fourth macrovariables were taken: physic-chemestry, microbiological, operational and sensorial
parameters. The flows current were treated with different analytical techniques and the results were statistically processed. Finally, the use of this technology in 85/15 export beer was evaluated and its effectiveness was proved as a rectifying stage of beer filtering. The durability of the beer after finishing the process of separation with membrane increases 3 times with regard to beer without filtering with membrane. The membrane of best results was M-14 at a preasure of 5 atm.
