Abstract

The present work shows the potentialities of producing inulin in Cuba, as nutritious supplement for its exceptional nutritional characteristic, from Tuna (Opuntia ficus-indicates). In this study, the raw material selection was carried out a study take into account the inulin content, readiness, among other aspects. An experimental study to obtain the extraction modeling under different levels of temperature and time of extraction, as well as the relationship solvente/raw material was released, and to determinate the
presence of inulin was used the thin layer chromatography (TLC). A flow sheet for the inulin production is presented and the dynamic indicators of the investment determined, demonstrate their technical and economic feasibility.
