Abstract

Were characterized environmentally production processes of beers and spirits in the industry combined Hatuey Brewery-Cuba Ron, A critical analysis of the technology used currently considering the most efficient and effective way to solve environmental pollution problems associated with prevention. The characterization also included auxiliary processes essential to the development of production processes. Finally we present the environmental assessment of a sui generis combination in Cuba by the variety of sets that this is developed and the characteristics of their location. The work revealed that the major negative environmental impacts and risks are generated
Brewery Hatuey so there should be prioritized necessary mitigation measures, with air pollution and water which is most manifest. Moreover, it was confirmed that the elimination of the production of rum at the distillery of the company allowed Cuba Ron significantly reduce the pollutant load referring to BOD5, COD, for the river Yarayó although it should be noted that this has caused some affectations of productive , and still continue discharging wastewater without any treatment.
